Caesar’s Mushroom

Latin name: Amanita Caesarea
Alternative names: Ovoli
Culinary uses: Raw/ Pickled

Belonging to a genus of mushrooms which include the deadly fly agaric, destroying angel, jewelled death cap and other equally dramatically named amanita’s, the Caesar Mushroom is a sought-after delicacy. It is at the “egg” stage that they are the most prized when the orange cap peeks out from the sealed stem ring resulting in a rounded egg shape. Records of Caesar’s Mushrooms date back more than 2000 years and were extremely popular with the Romans and remain so all over Italy. Most commonly served sliced raw to highlight the delicate taste they can of also be cooked and pickled.
